Happy November!!
Time flies doesn't it? I can't believe that it's already November and I only have two months left of my program. It feels like I just drove down here yesterday.
Nothing too exciting has happened this week. Celebrating Halloween was weird, I worked the party at work but since I have been doing the same thing for two months it didn't really feel like Halloween. I think I'm Halloweened out. But in one week we start Christmas parties, gahh! Here at Disney, thanksgiving doesn't exist, we just jump right from Halloween to Christmas. The first party is already sold out which is craziness and we already have Christmas merchandise out. They don't waste any time. I am told that the Christmas parties are really magical so I am excited for them to start.
Other than that, nothing has really been going on. Well, except that this morning I made the best breakfast I have ever made. I just recently bought myself a Mickey shaped pancake mold and I finally got the chance to use it! I made myself healthy pancakes in the shape of Mickey and then topped it with some homemade raspberry syrup that I made simultaneously. It was crazy delicious.
Here's the healthy pancake recipe if you would like to try them:
1 banana - mashed
1 egg
1/4 cup raw oats
Combine all the ingredients in a bowl and then just cook like any other pancake. If you are brave enough to make one big one then I'm impressed. Whenever I try to do that I can't flip it and it turns into a crumbly mess. I usually make two pancakes out of it. I cook them on really low heat so because they are really thick and so they need to set so that you can flip them.
I was able to make two Mickey ones perfectly. I liked using the mold because it kept it in place when I flipped it. Usually when I eat them I top them with a small spread of peanut butter but I had lots of raspberries so I decided to make a syrup and it was perfect, I will be doing that again.
Anyway, now that it is November, the month of giving thanks, I have decided to start a series of posts. Once a week I will post about things I am thankful for that week. My life is a blessing and I am already thankful for my parents, my friends, and the opportunities I have been able to experience. So, I am going to be focusing on the little things. The things that I don't always think about that I am thankful for.
So, that will be coming soon. I was going to do the first one in this post but since I spontaneously decided to talk about my awesome Mickey pancakes this has become really long. So, until next time!
